During a recent beer tasting at Galbraith's www.alehouse.co.nz in Auckland, we had the pleasure of meeting lots of brewers,
bar owners, bloggers and beer enthusiasts. We were impressed to see so many of our beers on their menu. Brewer, Ian Ramsay,
took us for a guided tour of the brewhouse. It is impressive how they go to extremes to make authentic British ales!

New cooperations- new beers!

New Zealand is full of great craft brewers.

We would not want to miss out on the opportunity to brew with some of these dedicated individuals. For that reason we traveled to Blenheim, the home of Renaissance Brewing Company. http://www.renaissancebrewing.co.nz/default.aspx.

Along with owners Andy and Brian, we met their brewer Søren,

a Dane who has his own brand, 8 Wired http://www.8wired.co.nz/ , brewed at the brewery.

As such, our collaboration is a triple: Renaissance/8 Wired/Nøgne Ø.

And what did we brew: A Kiwi ingredient version of the #100! With a bit of luck, we will get some shipped to Norway.

South East Asia is one of the better parts of the world to visit,
or live in for that matter. There is just one hitch: Good craft beer is
virtually not available. Some enthusiastic business partners
from Kuala Lumpur is now about to do something about that.

Later this month “Taps” will open its doors to the public with
16 craft beer on tap, and several well selected bottled beers.

Initially there will be Australian craft beer,
but in early 2012 Nøgne Ø and Mikkeller beers will be available as well.

The Taps founders are well aware that they will now be in charge of educating a whole nation in craft beer culture and understanding.

Vi brygger Mikkeller Beer Geek Breakfast lørdag 28.1.2012 kl 09:00 til ca 19:00. Dette brygger vi sammen. Deretter får alle deltagere med seg 20 liter vørter og gjær. Vi ønsker at alle gjør sitt beste og mest kreative med denne vørteren, f.eks smakstilsetninger, gjærtype, eller gjæringsemperatur. For de som ønsker å kjøpe malt eller humle,så selger vi dette til rabbatterte priser denne dagen.

Lørdag 17.3. fra kl 17:00 til 24:00 inviterer vi alle deltagerne til ølsmakefest i bryggeriet, der vi evaluerer og bedømmer resultatene og kårer en vinner. Dette er ment som en spleisefest der alle kan ta med seg engjest. Alle tar med egen øl (ikke til seg selv, men til alle andre) og sin favoritt ølsnacks (peanuts og potetgull er bannlyst). Nøgne Ø stiller med Cask conditioned ale.

Prisen for dette er kr 1000 (eller kr 1050 hvis du bestiller to Wlabs-rør). Det inkluderer vørter, gjæringsbøtte med lokk, fersk gjær fra Whitelabs (husk å spesifisere hvilken gjær du vil ha når du melder deg på), lunch og en øl på bryggerdagen og middag på ølsmakedagen.

We at Nøgne Ø like extremes. We realized that it was time to do what we could to make Beer Geek Breakfast (yes, we brew it for Mikkeller) even better.

The search for the the perfect coffee took us to the remote island of Store Torungen http://www.torungen-fyr.no/

At this Nøgne Ø (Norwegian for naked island) there are some enthusiasts who has a coffee roaster. All Coffea Circulor's coffee is traceable right down to the individual farmer.

After the roasting of Indian Monsoon Malabar, we had lunch in the lighthouse keeper's house.
What a day! What a coffee! What a beer!

Kristiansand-Copenhagen-Prague.
Used the day to check out good beer places in Prague. It's cheap beer everywhere, but most are relatively meaningless lager. Why this country is known for its beer, is a mystery to me!
I was picked up in Prague by Phil Quinn from Moravek and drove to Chotebor a 2 hour drive in the direction of Brno. Chotebor can best be described as a village in the middle of an agricultural area with a population of 9000.

I had plenty of time there and got a good briefing and demonstration of our new Tribloc (Tribloc is the term for a device that contains the rinser / filler / crowner) from Ruda who is head of one of Moraveks production facilities. We have something to look forward to! This device is extremely well designed and very solid, with many smart technical solutions.
In the evening there was dinner in the city's best restaurant, with representatives from Moravek and Cheops.

The next day began with a visit to Cheops.
Both depalletizer and bottle packer was about to become ready. Again, my impression that this is really solid and almost over-engineered machines that are very well thought out with regards to construction, control and operation.

Phil and I returned later to Prague to meet Mike Moravek. (He was in the middle of commissioning a new in-line mixer / Carbonators with Pepsi. A little thing thatmixes sugar and Pepsi concentrate and water and CO2 in-line with water at room temperature. 50 000 liters per hour!)
The evening was used to search for more good beer. The result was good this time - I found a local IPA!

What a busy week it has been, with six bottling runs including a couple of night shifts.

The highlight is the bottling of India Saison, which we brewed when Ben Kraus from Bridge Road Brewers visited a couple of weeks back. It is the first commercial beer brewed in Europe with Stella hops from Australia!

At the end of the week, we rounded the production run off with preparation for Christmas.

We all like surprises.

It is an many ways more fun to surprise others, than being surprised, we think.

When Ægir and Nøgne Ø planned to do a collaborative brew, we thought that making a lager beer together would probably be the best surprise.

As we are approaching the cold and dark season we decided to go for a rich, warming, malty and chewy, DoppelBock.

The general release date is September 23rd, but some bars where Nøgne Ø and Ægir have their draft beer side by side will be offered to have a pre release on Spetember 19th, so beer drinkers can compare the two versions of this beer.

They are both brewed the same way, with the same ingredients and the same brewers, but in different breweries and with different water.

The list of where to find "Der Kollaborator" is at this point in time undisclosed.

The Norwegian beer scene is truly in a dynamic stage. New craft breweries are entering the stage. Espen Lohte started Kinn Brewery about a year and a half ago, and has a great portfolio of well crafted ales. Kinn is a name everyone should get used to right away, because Espen and his beers are likely to be around for a while!

Kinn ferments all beers in open (and home made) fermenters.Yeast is all of top cropping strains. We admire Espen for his loyalty to this traditional method.

Norwegian summers are cold and short. Not ideal for growing hops. We are probably hoping for too much when we try to grow our own , but it is certainly worth a try!

Our barley, on the other hand is much more promising. It is just too bad that we have to send it out of the country to get it malted.

But we care about other things as well. Food for instance. Because food pairs well with beer.

Salmon is an interesting food subject. In Norway we grow salmon in farms. Or maybe we rear them. It is a fairly controversial matter. People say that these salmon farms pollute our waters. And that lots of the excess fodder given to these animals could have fed millions of people. And that farmed salmon has higher values of chemicals usually not found in wild fish (they are supposedly fed artificial colouring to get the right colour of the flesh).
The farmed fish occasionally runs away, and this creates problems for the wild salmon.
The Norwegian wild salmon population is in worse shape than ever.

When our local fish monger recently explained that the wild salmon season was now in full swing and it was going to be very short this year, it was evident that it was the right time to find out whether the difference in quality and flavour is as clear as lots of people claim.

Two pieces of salmon were purchased. With very different price tags!
These pieces were split in two. One half of each was poached. The other two halves were fried with only salt and pepper. The jury was very prejudice indeed, and inclined to think that this would be a total revelation. Happy wild fish would surely taste better than a depressed and drugged animal reared in captivity!

The verdict:
The wild salmon was firm and "meaty".
The farmed salmon was softer and fattier and sweeter in flavour.
All in all, and to our surprise, the conclusion was that these two salmons of different background were very similar.

And what did we drink with this? Wit of course!

This time we really did it! We just did not respect those laws of nature and guess what! Reality hit us hard with a mash that was just impossible to run off. I guess you kind of ask for it when you use 25% pumpkin pure, 30% malted rye, 10% rolled oats and...........
But we never gave in of course, and the mash was conquered by hauling it out from the top of the lauter tun by the bucket!
We have had better extract of course. We have also had more fun. But we do have Norway's first pumpkin ale! Ready for the Seattle Pumpkin Beer Festival later this year.

Mixed emotions

Sometimes it is hard to analyze ones feelings. At Nøgne Ø we feel a lot these days. Stress, muscle ache, desperation, guilt and maybe even gratitude.
The reason being that we have a hard time brewing enough beer.
It feels horrible to be out of certain beers. (This time it is IPA and Brown Ale.) We just do not have any more fermenting vessels to use, and the ones we have are fully utilized.
Outside rests 2 tanks which we have not started using. These could be the answer to this problem, but the building we are in is too small.
Should we feel guilty for being occasionally unable to deliver beers? In that case we would like to apologize to all our our followers and customers!
Or should we be grateful for the tremendous growth we have experienced in the Norwegian market the last year or so? Thank you Norwegian beer drinkers for understanding and appreciating what we are doing!
Regardless of our mixed emotions, we have a message: We promise to find a place for the two tanks. We promise not to let you down!!

Everyone knowes that we at Nøgne Ø have a passion for flavours. But what is perhaps known to a lesser extent is our passion for, not only beer, but food.
Being in charge of events and dinners, I always have full focus on the perfect pairings between food and beer. These treats are perhaps the worlds best kept secrets, but I believe it is time to disclose what we do here in our brewery:

1. For starters we start with a starter:
Brown Ale with walnuts/grapes/pickled onions
Bitter with chorizo made from Norwegian free range mutton
Imperial Brown Ale with Norwegian aged Gouda with Dijon mustard.

2. The main treat.
Pale Ale with juicy mustard baked super tender beef sirloin with puree of root fruits, sauted mushrooms and crispy green vegetables.

3. The sweet finale.
Porter with Nøgne Ø's heavy signature chocolate cake. Served with fresh berries and a tangy raspberry sauce.

Life is too good to be wasted on boring food!

Life is full of changes. Sometimes we need to choose. Choose change.

Like with our IPAs. We have four right now. Our regular IPA, Two Captains, Citra Single Hop and #500. As Two Captains is only around for a year, and there is soon another homebrew champion we can brew (The homebrewers championship takes place in April), sadly it needs to go.

This is of course an unfortunate thing for us. We love IPAs.
But, to our joy we were recently approached by a bar manager who wants us to make a Double Hop IPA. So we are soon back to four IPAs in our portfolio.
Double Hop IPA will be of English style, but with a bite of something American. We can promise 50 IBUs and dryhopping with Chinook. Available on draft!

Homebrew day 2011

For the third concecutive year we arranged a homebrew day at the brewery. For practical reasons we had to limit the number to 60 participants. Many were on waiting list.

This year we brewed Pale Ale, and everybody got their own yeast strain, as ordered from Whitelabs.
Thanks to all participants for making this a great event with lots of dedicated people! We will meet again on March 26th to taste each others beers, eat great food and have a party.
Do not forget to submit your beers for the competition. We need to receive it by March 18th.

For next year's event (January 28, 2012) we will brew Mikkeller Beer Geek Breakfast (Mikkel has given us green light!). It is more challenging than most beers, with lots of tricky grains and can easily end up in stuck mash!

The winter solstice occurs exactly when the Earth's axial tilt is farthest away from the sun at its maximum of 23° 26'. Though the winter solstice lasts only a moment in time, the term is also a turning point to midwinter or the first day of winter to refer to the day on which it occurs. It´s Christmas- it´s time for traditional food, but what should you drink?

In Norway there are three traditional dishes served on Christmas eve, depending on where you live. It is Pork Ribs («Ribbe»), Dried mutton ribs («Pinnekjøtt») or Cod («Torsk») served with potatoes, vegetables and maybe melted butter, sauce or bacon.

So, what beer is good to serve with this food? It is a little different if you serve aquavit, which is traditional. Both pork ribs and dried lamb has a lot of taste and fat, and we need something that rinses your mouth. These dishes are often served with aquavit which will do this.

For Pork Ribs, we recommend Wit or Bitter if it served with Aquavit. If served without Aquavit Pale Ale, Brown Ale, Julesnadder or Saison will be good.

The dried mutton ribs can also be served with Wit or Bitter if you also serve aquavit. Without, we recommend Pale Ale or Tiger Tripel.

Cod is the most difficult here. It has a very tender and delicious taste, but Havrestout can be a good match.

But why not add some experimentation to the Christmas table and try a sake? Nøgne Ø is also a proud brewer of five different sakes, and a Junmai-shu can be a nice pairing with your Christmas Cod. Remember to serve the sake cold!

For the dessert, if you serve «Multekrem» or cloudberry cream try the Havrestout or Imperial stout. For the nuts and cakes, try God Jul and Underlig Jul.

If you like a cigar to finnish the meal, a #100 is a good company.

It started with two enthusiatic homebrewers.
Now Nøgne Ø – The Uncompromising Brewery is a “gazelle” business for the third time. Their growth continues in percentages much higher than their strongest beers.

Looking up in Norway
Nøgne Ø has so far had more success internationally than in Norway, with beer export to a long list of European countries as well as to the USA, Japan, Canada, Australia and New Zealand. But this year the Norwegian market has also taken off, with help from good reviews for their beer in Norwegian newspapers. Last week they received a 7 from Dagbladet, on a 1 to 6 scale, for their strong Christmas beer God Jul. Last year Nøgne Ø produced approximately 280,000 liters. This year it will be over 400,000 liters, a growth of nearly 50 percent.

Our explanation
The Norwegian business newspaper Dagens Næringsliv chooses business in all parts of the country to be named “gazelle” businesses. It means essentially that a company is continually growing and profitable year after year.
In a country where all alcohol advertising and promotion is illegal it is important for Nøgne Ø to get attention in the press, who is allowed to write about alcohol and alcohol producers.

“Monday, November 8th, Nøgne Ø got another skilled employee! This time, Haldor Berge, our new daily manager form Valdres/Arendal. Berge has various relevant background, but has spent the last 4 years in If Insurance Company as an sales manager, of course very relevant for a company expanding both national and not at least, international!

Scott Larrick, daily manager for the last year, will continue at his originally tasks – as a sales manager for our export/import market. Larrick started at Nøgne Ø for three years ago, and as a daily manager he has served a company through exiting, challenging and award winning experiences in Norway and abroad! Our “small” company at Rygene is now the proud work place for 13 employees – and with this we welcome Haldor Berge to us – being the new person to drive Nøgne Ø towards known and unknown goals in the future!”

Christmas beers released in Norway.

Christmas beers have always been significant in Norway. Today Is the release date for this year.
We are proud to announce our four beers for this season:

Julesnadder, Underlig Jul(Peculiar Yule in the US), Special Holiday Ale(brewed with Stone and Jolly Pumpkin) and God Jul(Winter Ale in the US).

The sensational news for this years Christmas products is that for once we have purposely aged a beer. God Jul this year is about 10-15 months old, which we think is fairly optimal for this beer.

We know that most Norwegians are very particular about that the Christmas beer should be fresh. They do not understand that strong, dark beers benefit from aging. This year we hope that we will make these people understand what wonderful things that take place during aging.

Ideally we would age all our darker beers, but we do not have the capacity. Hence and indeed regrettably, we will not be able to do this for next years Christmas beers!!!

I guess we all have our different ceremonies. One of mine is to smoke good cigars in my garden during summer.
For a while now I have refused to accept that summer is over, but now I cannot deny it, and some days ago I had my last cigar. For this season, that is. Ahead is winter, chill, snow, darkness and hardship.

So which cigar did I choose to end the season?
A Hawk 1968 XXL Torpedo. And what a treat! At ring gauge 68, this is among the smoothest cigars I have ever had. Rich with vanilla, cloves and cocoa. And a perfect draw, which is typical for any cigar made by Chess Cigar Factory
This cigar is indeed a gentle monster. Monstrous to the eye, but gentle in any other way.
I am proud to claim that this is a Norwegian cigar!!!

Last week we had our Dark Horizon 3 release at Mikkeller Bar in Copenhagen. This bar is really a must if you are in Copenhagen.
Mikkel used to be a teacher before he ended up doing beer full time. I guess that is why the 15 beers on tap are put in chalk on a blackboard!

Recently we have received some comments about that our Wit has changed. Those who claim so are actually right. It was not purposely done by us, but happened as we started to use locally grown wheat in this beer.
We would like to claim that the change in flavor has made our Wit more thirst quenching and lighter in body; maybe closer to the historically authentic Wit(?)!
Like it or dislike it? We are proud to use local grains as it has less of an impact on the environment!

Dark Horizon 3rd edition will be released...

Nøgne Ø is proud to anounce that Dark Horizon 3rd edition will be released for the Danish market on September 20th. The release will take place in Mikkeller Bar at 1800, and there will be a small number of bottles of Dark Horizon 1st edition available as well. In addition there will be a cask of Nøgne Ø Single Hop IPA, which is brewed for an undisclosed customer in Oslo, and will be released there later this fall.

A keg of Two Captains Double IPA will also be available. This beer is the creation of Jan Halvor Fjeld, winner of this years Norwegian Championship for homebrewers.

A beer has fermented out of control

For the past couple of years, we have had the routine of brewing and bottling two brews a week. Recently we have done three, and this week we brewed 4 beers and bottled the same amount. This is quite an achievement, and everybody (and in particular our bottling crew) are pretty knackered.

In the middle of all these crazy days, I just had to take a photo of our Imperial Stout getting out of hand.

When we start the fermentation of a beer, we add yeast. The brewer uses a microscope and assesses the yeast he will use, then he calculates how much yeast he needs to add to this specific batch.

In general, our rule is this: Target is to introduce enough yeast cells to give 1 million yeast cells per degree Plato per milliliter. In this case, the imperial Stout is brewed at 22P, so we are talking 22 million yeast cells per milliliter. As there is 45 hectoliters in our fermenting vessels, a substantial number of yeast cells needs to be added(or pitched as we say). But if for some reason the maths did not work out, or maybe the quality of the yeast was not homogeneous or the observation through the microscope was inaccurate, then the beer can get the wrong amount of yeast pitched.
If the beer gets too much yeast, it will ferment too quick and very aggressively with lots of foam. This photo shows what it looks like in the morning, when a beer has fermented out of control during the night.

Extreme products will become available in Vinmonopolet

Finally, some extreme products will be available in the government owned outlet system for alcoholic beverages, “Vinmonopolet”:

Nøgne Ø have always liked the edges of the scale. Be it in bitterness, alcohol or color. In September a lot of extreme products will become available in Vinmonopolet. This really excites us!

Since we started to brew beer, we have always been playing with ingredients and flavors. Most have been fairly moderate, although it clearly has been revolutionary in a Norwegian context. In the recent past we have been having a little bit of extra fun, and now in September it will be possible to see the outcome in Vinmonopolet:

# 500, our 500th brew. An Imperial India Pale Ale. With 10% alcohol and 100 bitterness units, this is a small (but nice) monster. 5 types of hops, of which New Zealand Nelson Sauvin was used for dry hopping, contributes lots of flavor.

Two Captains. The winner of the Norwegian championship for homebrewers this year has brewed a Double India Pale Ale with us. This is a pretty aggressive IPA, with 120IBU and hoppy enough to mark the soul of most routined beer drinkers .

Sweet Horizon. Lots of sweetness. The perfect dessert! With a wonderful complex flavor of chocolate, malt, vanilla and coffee. This beer comes elegantly packaged in the metal cylinder. The bottle is 250 ml, because this beer has 14% alcohol.

Red Horizon. Another250 ml bottle of the metal cylinder. The world's first beer fermented with yeast to sake sake strength. This 17% strong ale has the body of a beer and the nose of a sake!

Junmai-shu. This is our only pasteurized sake, and therefore the only one which can come in the usual portfolio of Vinmonopolet. This is a sake made by the traditional Yamahai-shikomi method. (Well all our sake are!) An aromatic sake with good mouthfeel.

Since unpasteurized sake must be kept cool, such cannot get to the standard portfolio at Vinmonopolet. We think this is regrettable. For starters Vinmonopolet does not offer refrigerators or cold storage in their stores. In addition, no wholesalers/distributors with delivery agreement with Vinmonopolet has cold storage.

This means that Norwegian consumers do not have access to unpasteurized sake. Unpasteurized sake is more lively than pasteurized. In many ways it speaks with capital letters, or without filter if you will.

To try to do something with this, we challenge our customers to order directly from the outlets. This is referred to as special orders. This is done by the individual customer at Vinmonopolet outlets. We will then send the stuff by Post. The two to three days delivery time for this shipment is acceptable, even for nama-zake!

We now have 4 unpasteurized sakes:

Niogori. Milky White and slightly sparkling, with a grains of rice.

Nama-Genshu. Fermented with the famous Masumi-yeast. Peaches and sweet flower.

House Yeast. Fermented with naturally occurring yeast. Wild Raspberry and yuzu.

Yamahai motoshibori. A pressed moto (yeast starts). Intensely acidic, almost like rhubarb.

Kanpai!!!

Cigar and Nøgne Ø beers - a marvelous combination

We in the craft beer business are motivated to a great extent by the enthusiasm and love of flavours.
When I learned about Håkon Aanonsen and his passion for cigar, I promptly suggested to meet and taste each others products. In my mind, good craft beer and good cigars are excellent company.

We chose a wide range of beers to be tasted with cigars

Pure enjoyment. My personal favourite of the cigars tasted were a Chess Extreme robusto with aring gauge of 60!

Now what did we conclude with? Pretty much that big flavours are enjoyable. Chess Extreme and IPA/Imperial IPA or even an Imperial Stout is a pretty marvellous combination!

Norsk mikrobryggeri vant to priser i Australia
Mikrobryggeriet Den nøgne Ø i Grimstad har vunnet to priser under en ølkåring i Australia.

Premeringen kom overraskende på folkene på det lille bryggeriet Nøgne Ø i Grimstad.

- Det var fantastisk morsomt, fordi vi ble tatt helt på sengen da de ringte, sier Kjetil Jikiun

Glemte konkurransen
Nøgne Ø ble påmeldt Australian international beer awards etter at deres importør der nede tok initiativ til det.
- Vi gjorde en avtale med vår importør Australia for en stund siden. De betalte påmeldingsgebyret, og vi ga dem ølet vederlagsfritt. Så glemte vi alt om det, forteller Jikiun.

Beste utstiller
Arrangøren kaller ølkåringen den fremste presentasjonen av øl i den delen av Asia.

Nøgne Ø vant den viktigste prisen som beste utstiller. Og ikke nok med det, ølbryggerne i Grimstad fikk også en egen premie for det beste mikrobryggeriet.

- Vi er en gjeng dedikerte mennesker som jobber veldig hardt, og ofte er slitne. Dette var veldig bra for arbeidsmoralen, for å stå på videre og jobbe for det vi tror på, sier Jikiun.
